Homemade Sugar-Free KFC Coleslaw

I used some cabbage today for a soup and had most of the head of cabbage left.  So, I decided to make coleslaw for the first time.  

I LOVE KFC’s coleslaw! If I was going to take the time to make some for myself, then it had to taste like theirs.  I searched for KFC coleslaw recipes and found a ton of them!  So, I combined several recipes and came up with the following:

Homemade Sugar-Free KFC Coleslaw – FP

Printable Recipe

1 head of cabbage, shredded
1 small carrot, shredded
3/4 cup light mayonnaise
1 1/2 Tbs apple cider vinegar
1/2 Tbs lemon juice
1/3 cup xylitol + stevia to taste (I used 1/2 tsp.) OR 3/4 cup sugar of your choice
1/2 tsp. salt
1/8 tsp. pepper

Mix everything together.  Let coleslaw sit in refrigerator for at least two hours.  Stir again before serving.

      I couldn’t get the link to work but if it is from vitacost, it would be the right stuff. You could also use all stevia if you wanted. I like the taste of xylitol because it tastes most like real sugar.
