For the last two years, my husband and I have hosted Christmas dinner at our house. It’s nice having both of our parents over and being able to spend quality time with family. We plan on continuing this tradition every Christmas from now on.
This year my 4 year old, Gavin, was not feeling well. He had a fever and a headache and laid down on the couch while we adults ate our meal and talked. Usually, he would be stealing the show and interrupting conversations. Although I felt sorry for my poor boy, it was nice having great conversation for once! He felt much better a couple of days later and he’s back to stealing the show again.
The problem with hosting Christmas dinner is what to do with all the leftover ham. Besides ham and cheese omelets (my favorite), I like to try new recipes every year for variety. Believe it or not, I had never made ham salad sandwiches before this year. I will definitely be making them again. They are a very easy and tasty way to use up the leftover Christmas ham!
Ham Salad Sandwiches
2 cups leftover ham, chopped in a food processor
1 cup (about 1 large stalk) finely diced celery
2 tsp. Dijon mustard
2 hard boiled eggs, diced
1/4 cup pickle, diced
1/2 cup mayo
Optional: 1/4 cup diced onion
1 cup shredded cheddar cheese
In a bowl, combine all ingredients and stir until well blended. Serve on the bread of your choice (croissants, pitas, etc.). Makes 3 or 4 servings.
THM Notes: This is an S meal when served with low carb pitas.
