Banana Bread. Oh, the sweet smell of banana bread. My husband even talked about that wonderful smell as I was mixing up this recipe. After many tries, it finally came out as I remembered banana bread to be like - moist and delicious! Don’t worry, no food was wasted during the trail period!
Did you know that the first banana bread recipe was published during the Great Depression? They did not want to waste any overripe bananas during that difficult time.
Now let me tell you about this banana bread…..you will want to eat a lot of it. So, if you have a big family, this recipe is ideal. Otherwise, you may want to half the recipe. Or, you could make these into muffins and freeze them for later.
- 1 3/4 cups oat flour (gluten-free if necessary)
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/3 cup Truvia or THM Sweet Blend
- 2 bananas (mashed very well)
- 1/4 cup applesauce
- 1/4 cup Greek yogurt
- 2 egg whites
- 1 tsp. vanilla
- Preheat oven to 325 degrees.
- Mix dry ingredients together, then add wet ingredients and mix well.
- Pour mixture into a sprayed or greased loaf pan.
- Bake for 50 to 60 minutes or until done.
- This is a THM E recipe and one serving is 1/5 of a loaf.
